1. Prepare the Vanilla Beans:

If using vanilla beans, slice them open lengthwise and scrape out the seeds with a knife. Place the seeds and the empty pods into a saucepan. If you’re using vanilla extract, you can skip this step and add the extract later.

2. Combine Milk and Cream:

In a medium saucepan, combine the heavy cream, whole milk, and sugar. Stir over medium heat until the sugar is completely dissolved and the mixture is warm. Be sure not to let it come to a boil—just warm enough for the sugar to dissolve and the flavors to infuse.

3. Infuse the Vanilla:

Once the milk and cream mixture is warm, add the vanilla seeds (or vanilla extract) and the empty vanilla pods (if using vanilla beans) to the saucepan. Let the mixture sit for about 10 minutes, allowing the vanilla flavor to infuse.

4. Whisk the Egg Yolks:

In a separate bowl, whisk the egg yolks together. Slowly pour a small amount of the warm milk and cream mixture into the egg yolks, whisking constantly to temper the eggs (this prevents them from curdling). Once the egg yolks are warmed up, slowly pour the egg mixture back into the saucepan with the rest of the milk and cream mixture.

5. Cook the Custard:
