Step-by-Step Instructions:

1. Prepare the Pie Crust:

  • In a large mixing bowl, combine the gluten-free flour, sugar, and salt. Add the cold, cubed butter and cut it into the flour mixture using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Gradually add cold water, one tablespoon at a time, until the dough comes together. Add apple cider vinegar and mix until just combined. The dough should be firm and slightly sticky.
  • Divide the dough into two equal portions. Wrap them in plastic wrap and refrigerate for at least 30 minutes to chill.

2. Make the Apple Filling:

  • Peel, core, and slice the apples into thin slices. Place them in a large mixing bowl.
