Instructions:

1. Prepare the Ingredients:

Start by cutting the chicken breasts into bite-sized pieces. Wash and chop the broccoli florets into smaller, bite-sized pieces. Mince the garlic and ginger, and set them aside. In a small bowl, whisk together the gluten-free soy sauce, rice vinegar, honey or maple syrup, cornstarch, and water to make the stir-fry sauce.

2. Cook the Chicken:

Heat 1 tablespoon of olive oil (or sesame oil) in a large skillet or wok over medium-high heat. Add the chicken pieces and season with a pinch of salt and pepper. Cook the chicken for about 6-8 minutes, stirring occasionally, until it’s cooked through and lightly browned. Remove the chicken from the skillet and set it aside.

3. Sauté the Garlic and Ginger:
