Italian seasoning1 tsp
Fresh parsley (chopped, optional)1 tbsp

Step-by-Step Instructions:

  1. Cook the Pasta: Cook the gluten-free pasta according to the package instructions. Drain and set aside. Be sure to cook it just until al dente, as it will continue to cook in the casserole.
  2. Cook the Chicken: While the pasta is cooking, heat a large skillet over medium heat and add a drizzle of olive oil. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook the chicken for about 6-7 minutes per side, or until it’s fully cooked and the internal temperature reaches 165°F. Remove the chicken from the pan, shred it with two forks, and set aside.
  3. Make the Alfredo Sauce: In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Sprinkle in the gluten-free flour and stir to make a roux. Slowly whisk in the milk and heavy cream, making sure there are no lumps. Bring the mixture to a simmer and cook for 3-5 minutes, or until it thickens.
